Green Eggs

This weekend one of my projects was to clean the remaining eggs from Sally our emu hen. This is about half of her production this last fall and winter. I scratch and poke a hole in one end of the egg then scramble the insides with a straw and shake the egg over a bucket to catch the yolk and whites as it falls out of the egg. Each egg equals approximently one dozen chicken eggs. No I do not eat them. I give some to the dogs fresh out of the egg then freeze the left overs to put over their food later. Yumm! I sell some to my friend Cindy who has a dental tool to etch them. Each emu egg has three colors to etch out. The dark green on the outer layer, then a light green on the second layer and last there is a layer of white. Some people can make some beautiful pictures on each egg using the natural colors. I felt over them!
